Nourishing Broccoli Soup

As we enter the last month of winter, it’s the perfect time to enjoy a bowl of heartwarming goodness. One dish stands out as a personal favourite that perfectly captures the essence of the season – Broccoli Soup.

Not only does this soup offer a delicious and comforting taste, but it also provides a substantial dose of nutrients that are particularly beneficial during the winter months.

Broccoli Soup

Servings: 2

Ingredients:

  • 1 tbsp olive oil
  • 2 garlic cloves, crushed
  • 500ml vegetable stock
  • 400g broccoli, cut into florets
  • 100ml milk (or coconut milk or a suitable alternative)
  • Freshly ground black pepper

Method:

  1. Heat oil in large pan, add the garlic and gently saute for 1 minute or so, taking care not to let it burn.
  2. Add the stock and broccoli and bring to boil.
  3. Reduce heat, cover and simmer for 10 minutes, or until broccoli is tender.
  4. Add the milk, black pepper (to your taste), then blend until smooth.
