Nourishing Broccoli Soup
As we enter the last month of winter, it’s the perfect time to enjoy a bowl of heartwarming goodness. One dish stands out as a personal favourite that perfectly captures the essence of the season – Broccoli Soup.
Not only does this soup offer a delicious and comforting taste, but it also provides a substantial dose of nutrients that are particularly beneficial during the winter months.
Broccoli Soup
Servings: 2
Ingredients:
- 1 tbsp olive oil
- 2 garlic cloves, crushed
- 500ml vegetable stock
- 400g broccoli, cut into florets
- 100ml milk (or coconut milk or a suitable alternative)
- Freshly ground black pepper
Method:
- Heat oil in large pan, add the garlic and gently saute for 1 minute or so, taking care not to let it burn.
- Add the stock and broccoli and bring to boil.
- Reduce heat, cover and simmer for 10 minutes, or until broccoli is tender.
- Add the milk, black pepper (to your taste), then blend until smooth.
